  • 1 can each black, pinto & garbanzo beans
  • 2 T oil
  • 1 large onion, chopped
  • 5 garlic cloves, minced
  • 1 jalapeno, minced
  • 2 finely chopped carrots (1 C)
  • 1 red bell pepper, chopped
  • 1 small zucchini, chopped
  • 2 t dried oregano
  • 1/2 c salsa
  • 1 1/2 t salt
  • 1 t ground cumin
  • 1 t chili powder
  • 1 large tomato, diced
  • 1 c corn
  • 1/2 c chopped fresh cilantro
  • 8 tortillas
  • shredded cheeses
