Ingredients

  • 250 ml ketchup
  • 250 ml salad cream
  • 2 tbsp brandy
  • None None Pinch of sugar
  • 500 g leeks, halved lengthways and cut into 1cm strips
  • 2 cans (200g each) sweet corn, drained
  • 500 g sliced cooked ham, cut into 2cm squares
  • 250 g romaine lettuce, chopped into bite-sized pieces
  • 2 cans (300g each) mandarin segments, drained
  • 5 None hardboiled eggs, peeled and quartered
  • 2 sprigs fresh flat-leaf parsley, finely chopped

Directions

    For the dressing, combine ketchup, mayonnaise and brandy. Season and add a pinch of sugar. Set aside.

    Blanch leeks in boiling salted water for 2 mins. Drain and rinse under cold water.

    In a glass serving bowl, layer leeks, sweet corn, ham, lettuce and mandarin oranges in layers of about 3/4 inch high, drizzling dressing between each layer. Top with eggs and sprinkle with parsley.
