- 1 c. uncooked rice
- 1 c. canned whole kernel corn, drained
- salt and pepper
- 2 cans tomato sauce
- water
- 1/2 c. each finely chopped onion and green pepper
- 3/4 lb. uncooked ground beef (turkey or chicken)
- 4 strips bacon, cut in halves
Directions

1Start heating oven to moderate 350°.

2Place these ingredients in layers in a 2-quart baking dish with a tight fitting lid:

3first rice, then corn; sprinkle with salt and pepper.

4Pour over 1 can tomato sauce and 1/2 can water and layer onion, green pepper and ground beef.

5Sprinkle with salt and pepper.

6Pour second can tomato sauce and 1/4 can water.

7Cover meat with bacon, cut in halves.

8Cover and bake at 350° for 1 hour.

9Uncover and bake 30 minutes longer until bacon is crisped.
