Ingredients
- all-purpose flour
- salt
- pepper
- 4 boneless chicken breasts
- 1/8 cup cooking oil
- 1 medium onion, sliced and quartered
- 1/2 cup golden raisin
- 1 1/3 cups basmati rice, raw, white
- 2 cups water
- 1/2 cup flaked coconut
- 1/2 cup salted peanuts, chopped
- 4 teaspoons curry powder (or to taste)
Directions

1Prepare/measure all ingredients first.

2Mix flour, salt and pepper and coat chicken.

3Melt margaine in Wok over medium high heat.

4Brown chicken and set aside.

5Reduce heat to medium.

6Do NOT clean Wok.

7Cook onion in Wok until tender but not brown.

8Add raisins and heat until they puff.

9Add curry and stir until mixed.

10Stir in rice, coconut and peanuts.

11Mix well.

12Add water.
-
13Spoon rice mixture into ungreased baking dish.

14Place chicken on top - skin side up.

15Bake at 350F about 45 min or until chicken is cooked.

16Serve in baking dish.
