- 2 Tablespoons Cream Cheese

1Beat the eggs until light and fluffy.

2Heat a frying pan for 2 minutes over low heat. Pour in olive oil and then pour in the beaten eggs.

3Drop the diced tomatoes, walnuts and the cream cheese. Cook until the mixture is no longer runny. Add some salt and pepper and oregano.
