- 1 slice abalone, pounded lightly
- 1 egg, beaten
- 1 oz. saffron oil
- season to taste
Directions

1Take the steak and flour it.

2Season the beaten egg. Place the steak in the egg (a pie plate serves well for this).

3Use a good saute pan.

4Bring the oil to a slight smoke point.

5Spread the steak and egg mixture and turn fast.

6Cook for no more than 4 seconds a side.

7Serve immediately.
