  • 1 egg, beaten
  • 1 c. buttermilk
  • 1/2 c. brown sugar
  • 1 c. sifted flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. oatmeal (not instant) or rolled oats
  • 1 c. chopped dates
  • 1/2 c. chopped nuts (prefer walnuts)
  • 2 Tbsp. melted shortening

    Combine egg and buttermilk.

    Add brown sugar.

    Sift flour, soda and salt; add it all at once to egg mixture.

    Add oatmeal, dates and nuts.

    Stir enough to combine.

    Fold in melted shortening.

    Bake in greased and wax paper lined loaf pan at 350° for 50 to 60 minutes.

    Better to serve a day later; bread will be more moist.
