Ingredients

  • 1/2 cup cane vinegar *
  • 1 head garlic crushed
  • 1 tsp. fresh ground black pepper
  • 1 bay leaf
  • 2 tbsp. rock salt
  • 1 cup dark soy sauce
  • 1 tsp. sugar
  • 1 lb. chicken, serving size
  • 1 lb. pork, serving size
  • 4 oz. sliced pork liver
  • 1/2 cup water

    Combine all ingredients in a saucepan except water.

    Let soak for 45 minutes.

    Add water and mix well, simmer 1/2 hour, covered.

    (Don't open the lid, the acidity in vinegar will evaporate).

    Cook until a little oil is produced from the pork.

    Increase the heat for 5 more minutes.

    Serve with steamed rice.
