- 1 tablespoon kosher salt
- 1 teaspoon granulated garlic powder
- 1 teaspoon granulated onion powder
- 1 teaspoon freshly ground black pepper
- 1 teaspoon ground turmeric
- 2 teaspoons finely chopped fresh oregano
- 4 large Idaho potatoes, peeled
- 1 quart vegetable oil
Directions

1Combine seasonings in a small bowl.

2Cut potatoes into 1/4-inch-thick slices lengthwise, then cut each slice into 1/4-inch-thick fries.

3Place in a large bowl of cold water.

4Heat oil in a large straight-sided skillet to 325 degrees.

5Dry potatoes in batches on paper towels.

6Fry each batch for 3 to 4 minutes and drain on paper towels.

7Increase heat of oil to 375 degrees and fry the potatoes again, in batches, until golden brown.

8Drain and sprinkle with adobo seasoning mix.
