- 2 cups flour
- 14 cup sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 2 cups buttermilk
- 3 eggs, separated
- jam or jelly, for filling
Directions

1Sift together flour, sugar, salt, and baking soda.

2Add buttermilk and egg yolks.

3Stir together until a batter forms.

4In a separate large glass or metal mixing bowl, beat the egg whites until foamy until soft peaks form.

5Lift your beater or whisk straight up: the egg whites will form soft mounds rather than a sharp peak.

6Fold the egg whites into the prepared batter.

7Place an aebleskiver pan over medium heat; prepare each cup with cooking spray.

8Pour the batter into each cup to about 2/3 full.

9Put a dollop of jam or jelly in the center of each and top with a little more batter.

10Cook until golden brown on each side, 1 to 2 minutes per side.

11Use a toothpick to flip them.

12Serve with a heavy dusting of powdered sugar.
