Ingredients

  • 1 onion large
  • 2 medium tomatoes
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon garlic paste
  • 2 Thai chilis or milder chili
  • 1 bunch chopped cilantro finely
  • 1 teaspoon salt
  • 4 eggs organic
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon tumeric powder
  • 1/4 teaspoon coriander powder Cumin-
  • 1/2 teaspoon masala Pav Bhaji, optional
  • 1/2 tablespoon oil
  • 1/4 stick butter

Directions

    Heat the oil and butter together, and then add the chopped onions, ginger and garlic paste

    Fry the onions until they're browed
  3. 3
    Add the chopped tomatoes, all the spices, finely chopped chilis, and continue to cook it till the water from the tomatoes evaporates, making a pasty consistency

    Add the salt and the cilantro and remove from heat. Let the mixture cool down.

    Mix in the eggs and whisk them well into the mixture.

    Put this back onto medium-low heat and cook the eggs until desired doneness. Generally prefer slightly runny,

    Serve hot with toasted bread or indian chapatis/rotis.
