- 1 large can mandarin oranges
- 1 c. rice
- 1 tsp. curry powder
- 1 Tbsp. chopped parsley
- 1 c. melted butter
- 4 Cornish hens
- 1/2 c. white wine
Directions

1Drain oranges and reserve juice.

2Cook rice according to directions, using juice as part of the water.

3Stir in curry powder, parsley, 1/2 cup butter and the oranges.

4Stuff hens lightly, then secure opening with skewer.

5Place on broiler pan. Combine with the rest of the butter and the wine, then brush with butter mixture.

6Bake at 350° for 1 hour and 15 minutes, basting frequently.
