Ingredients

  • 4 chicken breast, flattened
  • 1/2 c. milk
  • dash of tabasco
  • 1/2 c. flour
  • 2 Tbsp. olive oil, divided
  • 2 Tbsp. butter, divided
  • 2 leeks (white part only, chopped)
  • 1/4 c. parsley
  • 1 tsp. fresh rosemary, minced
  • 1/3 c. white wine (may substitute chicken broth)
  • 1 tsp. brown mustard
  • juice of one lemon

Directions

    Combine tabasco and milk.

    Dip chicken breast in milk mixture then dredge in flour.

    Saute in 1 tablespoon of olive oil and 1 tablespoon butter, for 3 minutes on each side.

    Place in baking dish and bake at 350° for 10 minutes.

    Add 1 tablespoon olive oil to skillet and saute leeks.

    Add remaining ingredients and pour over chicken breast.

    Serve with pasta or rice.
