- 1 lb ground beef (or turkey)
- 1 cup uncooked long grain white rice
- 3 carrots (peeled and chopped)
- 3 small zuchinis (chopped)
- 1/2 onion sliced
- 1 tsp ground cumin
- 1 onion powder
- 1 garlic powder
- 1 kosher salt
- 1 ground pepper
- 6 cup chicken broth
- 1 tbsp oregano
Directions

1In bowl, mix ground beef, rice, salt, pepper, cumin, garlic powder and onion powder.

2Form into golf size balls and place on tray.

3Once done refrigerate for at least 10 minutes.

4This will help the meatballs stay intact when cooking.

5In pot, place chicken broth, carrots, zucchini, and oregano.

6Bring to boil over high heat.

7Cook until vegetables are tender.

815-20 minutes.

9Add meatballs and cook over medium heat for an additional 30-45 minutes.

10Serve with warmed corn tortillas.
