- 8 None eggs
- 1/3 cup heavy cream
- 1/2 cup Parmesan, shaved
- 8 slices pancetta, chopped
- 3 1/2 oz button mushrooms, roasted
- 3 1/2 oz cherry tomatoes, roasted
- 8 slices thick bread, toasted
Directions

1In a large bowl, whisk together eggs, cream and Parmesan. Season to taste.

2Heat a large, lightly greased non-stick skillet over high heat. Cook pancetta for 2-3 mins until crisp.

3Reduce heat and add egg mixture to pan; stir over low heat for 2-3 mins until almost set. Remove from heat.

4Serve with toast, tomatoes and mushrooms.
