Ingredients

  • 1 tsp organic butter
  • 1 tbsp olive oil
  • 500 grams lean minced beef
  • 2 medium onions, chopped
  • 3 garlic cloves
  • 1 tsp chilli powder
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tbsp plain flour
  • 300 ml beef stock
  • 400 grams chopped tomatoes
  • 200 grams mixed beans
  • 3 tbsp tomato puree
  • 1 tsp caster sugar
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1 pinch black pepper
  • 1 pinch black sea salt
  • 3/4 medium sweet pepper, diced
  • 1 large carrot, diced

Directions

    Mix together the olive oil and butter.

    Break up the mince and stir in the pinch of salt and pepper.
  3. 3
    Add the oily butter to a hot pan.

    Add the onion, minced beef, sweet pepper and carrot.

    Fry for about 5mins.

    Add the garlic, chilli powder, cumin and coriander.

    Stir and fry for a few mins.sprinkle over the flour and stir well.

    Stir in the stock.

    Tip in the tomatoes, tomato puree, mixed beans, caster sugar, oregano and bay leaf.

    Stir well.

    Cover loosely with a lid.

    Reduce the heat and leave to simmer for about 45minutes until the sauce has thickened.

    Season to taste and serve!
