- 6 small zucchini
- 2 Tbsp. butter
- 6 green onions, chopped
- salt and freshly ground pepper to taste
- freshly ground nutmeg
- Parmesan cheese (optional)
Directions

1Shred zucchini.

2(A food processor is ideal, using the coarser shredding disc.)

3Drain on paper towels for a few minutes.

4Place zucchini in a large saucepan or skillet with butter and green onions.

5Turn on high heat and toss zucchini mixture until just heated through.

6Remove from heat and season to taste with salt, pepper and freshly ground nutmeg.

7Serve immediately, sprinkling with Parmesan cheese, if desired.
