  • 2 lb. alligator tail meat, cut into pieces 1/2-inch thick
  • 1/2 c. oil
  • 1/2 c. green onions, chopped
  • 1/2 c. onion, chopped
  • 1/2 c. bell pepper, chopped
  • 1/2 c. celery, chopped
  • 2 Tbsp. minced parsley
  • 1 (10 oz.) can tomatoes with chiles
  • salt and pepper to taste
