  • 1 med onion, finely minced
  • 1 sm clov garlic, finely minced
  • 2 Tbsp. vegetable oil
  • 8 ounce tomatoes, skinned and minced
  • 4 ounce almonds, grnd or possibly coarsely crushed
  • 6 ounce wholemeal breadcrumbs salt and freshly milled black pepper to taste freshly minced parsley to garnish

    Saute/fry the onion and the garlic in the oil in a pan till softened.

    Add in the tomatoes and cook for another 5 min.

    Pour the mix into a bowl and add in the almonds and breadcrumbs.

    Mix well.

    Season to taste with salt and black pepper.

    Form the mix into small, bite-size balls.

    Arrange on serving plate and cover them with masses of minced parsley.
