Almond Currant Granola

Ingredients

  • 3 c old-fashioned, rolled oats
  • 1 c currants
  • 3/4 c sliced almonds
  • 3/4 c chopped hazelnuts
  • 3/4 c pepitas (pumpkin seeds)
  • 3/4 c unsweetened, shredded coconut
  • 1/4 c brown sugar
  • 1/4 c water
  • 4 T unsalted butter
  • 2 T maple syrup
  • 1 t ground cinnamon
  • 1/2 t salt
  • Zest of one orange

Directions

    1. Preheat oven to 300 F.

    2. In large bowl, combine all ingredients through coconut. Mix well.

    3. In a small saucepan, combine sugar, water, butter, maple syrup, cinnamon, salt and zest. Heat until bubbly and sugar dissolved.

    4. Pour hot liquid over dry ingredients, and mix until coated.

    5. Spread granola on a baking sheet. Bake 20 minutes, stirring at least once halfway through, until golden brown. Let cool before storing.
