Almond Topped Carrots

- 2 lb. carrots, julienned
- 2 c. water
- 1/2 c. golden raisins
- 1/2 c. butter or margarine, melted
- 6 Tbsp. honey
- 2 Tbsp. lemon juice
- 1/2 tsp. ginger
- 1/2 c. slivered almonds, toasted
- dash of pepper
Directions

1In a saucepan, bring carrots and water to a boil; reduce heat.

2Cover and cook for 10 minutes or until crisp but tender. Drain and add the raisins, butter, honey, lemon juice, ginger and pepper.

3Place in greased 2-quart baking dish.

4Cover and bake at 350° for 35 minutes or until the carrots are tender.

5Sprinkle with almonds before serving.

6Serves about 12.
