- 1 cup Dry Quinoa
- 3 Tablespoons To 4 Tablespoons Olive Oil
- 1 whole Onion
- 1 whole Yellow Squash
- 2 whole Zucchini
- 1 whole Eggplant
- 1 Tablespoon Garlic
- 1 can Diced Tomatoes (10 Oz.)
- 1 jar Prepared Pasta Sauce (24 Oz.)

11) Heat a large skillet with 3-4 tablespoons of olive oil (enough to saute all the veggies).

22) Prepare quinoa according to package directions, typically the grain takes 20-30 minutes to cook.

33) Dice onion and cook over medium heat in the olive oil until translucent.

44) While onion is cooking, dice squash, zucchini, and eggplant.

55) Add eggplant and garlic to the onions, cook slightly before adding squash and zucchini, about 2-3 minutes.

66) Add squash, zucchini, and tomatoes, cook for 5 minutes.
