Ingredients

  • 1/2 c. margarine or butter
  • 1 c. sugar
  • 2 eggs
  • 1 ripe banana, mashed
  • 2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 (7 oz.) can crushed pineapple
  • 1/2 c. shredded coconut

Directions

    Preheat oven to 350°.

    In medium bowl, cream margarine and sugar until light and fluffy.

    Add eggs and beat well.

    Stir in banana.

    Sift flour, baking powder, baking soda and salt into creamed mixture; mix well.

    Fold in undrained pineapple and coconut.

    Pour into greased and floured 9 x 5-inch loaf pan.

    Bake for 1 hour and 10 minutes or until pick inserted in center comes out clean.
