- 1/2 c. margarine or butter
- 1 c. sugar
- 2 eggs
- 1 ripe banana, mashed
- 2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 (7 oz.) can crushed pineapple
- 1/2 c. shredded coconut
Directions

1Preheat oven to 350°.

2In medium bowl, cream margarine and sugar until light and fluffy.

3Add eggs and beat well.

4Stir in banana.

5Sift flour, baking powder, baking soda and salt into creamed mixture; mix well.

6Fold in undrained pineapple and coconut.

7Pour into greased and floured 9 x 5-inch loaf pan.

8Bake for 1 hour and 10 minutes or until pick inserted in center comes out clean.

9Makes 1 loaf.
