  • 2 x 15 oz cans peach halves, drained
  • 3.5 oz crushed amaretti cookies or almond biscotti
  • 2 tbsp ground almonds
  • 1 tbsp cocoa powder
  • 2/3 cup Marsala
  • 2 tbsp butter, chopped
  • None None Mascarpone, to serve

Directions

    Preheat oven to 350°F. Arrange peaches, cut-side up, in an oven safe dish. Combine cookie crumbs, ground almonds and cocoa in a bowl. Spoon liberally into each peach cavity.

    Drizzle marsala over peaches and dot with butter. Bake for 10-15 minutes, until hot and bubbly. Serve peaches warm with mascarpone.
