Andrea'S Split Pea Soup

Ingredients
- 1 (1 lb.) pkg. dried split green peas
- 2 stalks celery, diced
- 2 carrots, grated
- 2 tsp. garlic salt
- 2 bay leaves (whole)
- 1 lb. smoked sausage
- 2 medium potatoes, diced (optional)
- 2/4 lb. ham hocks
- 1 onion, diced
- 2 sprigs parsley, diced
- 2 tsp. pepper
- 1/2 tsp. oregano
- 1 (10 oz.) pkg. baby green peas (frozen)
Directions

1Wash and drain split peas.

2Combine peas, ham hocks, fresh vegetables and seasonings in a Dutch oven.

3Cover with about 2 1/2 quarts water; bring to a boil.

4Reduce heat; simmer for 1 to 1 1/2 hours.

5Remove ham hocks; take meat off of bones.

6Dice ham and add to peas.

7Slice sausage, adding to soup.

8Add frozen peas; simmer for about 20 to 30 minutes.

9Serve with crusty, warm French bread.
