Ingredients
- 1/2 c. seasoned breadcrumbs
- 1/2 c. chopped mushrooms
- 1 medium onion, diced
- 1 clove garlic, pressed
- 1 tsp. oregano
- 1 egg, beaten
- 1 1/2 lb. ground elk, venison, antelope or beef
- 1/2 c. barbeque sauce (spicy)
- parsley for garnish
Directions

1Preheat oven to 350°.

2Combine the first 7 ingredients and knead to ensure that they are evenly mixed.

3At this point the mixture should be somewhat sticky.

4Add barbeque sauce last, a little at a time, to moisten the meatloaf.

5Grease a loaf pan and spread the meatloaf evenly.

6Sprinkle with parsley.

7After the meatloaf bakes about 35 minutes, check to see if it is cooked to your liking.

8Do not overcook.

9Good with Beaujolais or Cabernet wine.
