Ingredients

  • 1/2 c. seasoned breadcrumbs
  • 1/2 c. chopped mushrooms
  • 1 medium onion, diced
  • 1 clove garlic, pressed
  • 1 tsp. oregano
  • 1 egg, beaten
  • 1 1/2 lb. ground elk, venison, antelope or beef
  • 1/2 c. barbeque sauce (spicy)
  • parsley for garnish

Directions

    Preheat oven to 350°.

    Combine the first 7 ingredients and knead to ensure that they are evenly mixed.

    At this point the mixture should be somewhat sticky.

    Add barbeque sauce last, a little at a time, to moisten the meatloaf.

    Grease a loaf pan and spread the meatloaf evenly.

    Sprinkle with parsley.

    After the meatloaf bakes about 35 minutes, check to see if it is cooked to your liking.

    Do not overcook.

    Good with Beaujolais or Cabernet wine.
