- 1 1/4 c. sifted cake flour
- 1/2 c. sifted sugar
- 1 1/2 c. egg whites
- 1/4 tsp. salt
- 1 1/4 tsp. cream of tartar
- 1 tsp. vanilla
- 1/4 tsp. almond extract
- 1 1/3 c. sugar
Directions

1Preheat oven to 375°.

2Measure sifted flour.

3Add 1/2 cup sugar.

4Sift together 4 times.

5Combine egg whites, salt, cream of tartar and flavorings in a large bowl.

6Beat with sturdy beater until moist peaks form.

7Add 1 1/3 cups of sugar in additions, folding in with large wire spoon.

8Pour into ungreased 10-inch tube pan.

9Run spoon around edge 2 times to get rid of bubbles. Bake for 35 to 40 minutes at 350° to 375°.

10Cool cake upside down in pan, resting on cake rack.

11Yields 16 servings.
