  • 1 lb. smoked sausage, cut into 1/2-inch pieces
  • bacon drippings
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 (6 oz.) can tomato paste
  • 5 (6 oz.) cans water
  • 2 c. uncooked rice
  • salt and pepper to taste

    Brown sausage in bacon drippings; add onion and green pepper. Saute.

    Stir in tomato paste and water; add rice and salt and pepper to taste.

    Simmer on low for 45 minutes or until rice is done.
