Ingredients

  • 2.5 pounds chicken thighs cubed
  • 2 tablespoon coconut oil
  • 1 teaspoon salt
  • 2 cups onions, chopped
  • 4 cloves garlic
  • 2 tablespoons fresh ginger, finely grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground corriander
  • 1 teaspoon ground tumeric
  • 1 teaspoon ground cayenne
  • 1 teaspoon gara masala (used at end of cooking)
  • 28 ounce canned chopped tomatoes
  • 1 can coconut milk
  • 4 tablespoons chopped cilantro (half as garnish)
  • 2 tablespoons Sambal Oelek (to taste)
  • 8 wedges Large lime cut in wedges

Directions

    Heat the coconut oil in a wide deep pan and add the salted chicken cubes and leave them undisturbed to brown a bit. Remove them to a separate bowl. Add the onions, garlic and ginger to the pan and cook until translucent, about 5 minutes or so.

    Add the spices (except the gara masala,) and cook for a couple of minutes, then add about a 1/4 cup of water to lift the spices from the bottom of the pan.

    Add the can of chopped tomatoes, and then the coconut milk and 2 Tbs of the cilantro.

    Add back the chicken and the Sambal Oelek and gara masala. Simmer for about an hour on low heat.

    Adjust salt and add more Sambal Oelek to increase the heat.

    Serve on rice with lime wedges and garnish with remaining chopped cilantro.
