  • 1 cup graham crackers crumbs
  • 2 tablespoons light brown sugar
  • 4 tablespoons unsalted butter melted
  • 12 ounces cream cheese softened
  • 3/4 cup sugar
  • 1 1/2 tablespoons lemon juice
  • 1/2 teaspoon vanilla
  • 1 dash salt
  • 3 eggs
  • 29 ounces pear halves can of, in heavy syrup

    In a big enough bowl combine Graham cracker crumbs and brown sugar. Mix to combine.

    Add the melted butter and stir until all the crumbs are evenly moistened. Press 1 tbsp of crust mix into each paper cupcake from and set aside

    In a bowl, combine cream cheese, sugar, lemon juice, vanilla, and salt. beat with an electric mixer until smooth and fluffy. Add eggs, one at a time; beat well after each addition. Pour filling over the crust in the paper cupcake forms.
