Ingredients
- 1 cup plain flour
- 1-1/2 cup rolled oats
- 3/4 white sugar
- 3/4 coconut
- 1 tsp. powdered ginger
- 4-1/2 oz. butter
- 2 tbsp. golden syrup
- 2 tbsp. boiling water
- 1-1/2 tsp. bicarbonate of soda
Directions

1Preheat oven to 170C/340F.

2Melt butter and golden syrup together in a saucepan over a low heat.

3In a large bowl mix together flour, oats, sugar, coconut and ginger.

4Disolve bicarbonate of soda in boiling water.

5Add to metled butter mixture.

6It should froth up.

7Quickly add butter mixture to dry ingredients and mix well.

8Spoon tablespoons of mixture onto greased trays.

9Flatten slightly.

10Leave room to spread.

11Bake in middle of oven for 15 to 20 minutes or until golden.

12Cool on wire racks.
