- 3 (6-inch) flour tortillas
- corn oil (for frying)
- 1 c. shredded Monterey Jack cheese with jalapeno pepper
- 1/2 c. shredded Cheddar cheese
- 1/2 c. finely chopped tomato
- cilantro, minced
Directions

1Fry tortillas one at a time in hot oil in skillet until crisp and golden, turning once.

2Drain on paper towels.

3Place on baking sheet.

4Sprinkle mixtures of cheese over tortillas.

5Top with tomato.

6Bake at 350° for 10 minutes or until each cheese melts. Cut each tortilla into quarters.

7Top with cilantro.

8Serve warm. Yields 3 to 6 servings.
