Apple and Cheese Pudding

  • 1 lb apple
  • 1 ounce butter
  • 1 teaspoon vanilla
  • 5 ounces whole milk
  • 3 ounces cottage cheese
  • 2 eggs, beaten
  • 1 ounce sugar
  • 1 teaspoon cinnamon

    Peel,core and slice apples as for pie.

    Cook the apple slices gently in fry pan with butter and vanilla until slightly soft.

    Place in a buttered ovenproof dish.

    Beat together the milk, cheese, eggs and sugar.

    Pour over the apples.

    Sprinkle cinnamon over top.

    Bake at 375 degrees for 25 minutes or until apples are fork tender.

    Serve warm.
