Apple And Yogurt Pudding

  • 1 cup brown sugar
  • 3/4 cup all purpose flour
  • 3 5/8 tablespoons margarine softened
  • 3 plain yogurt
  • 3 apples
  • 2 eggs
  • ground cinnamon

    Preheat oven to 180°C (approximately 350°F).

    In a bowl, mix sugar and flour.

    Add margarine, yogurt and eggs.

    Grate 2 1/2 apples.

    Add grated apples to flour mixture and stir well.

    Grease a loaf pan with margarine and dust the bottom with flour and sugar.

    Cut remaining apple half into quarters and core.

    Cut apple quarters into thin slices and place on top of the sugar in the pan.

    Pour batter in pan.

    Bake in preheated oven for 40 minutes or until firm.

    Allow to cool, remove from pan and sprinkle with cinnamon, if desired.
