  • 1 (3 lb) broiler-fryer chickens, cut up
  • 12 teaspoon salt
  • 18 teaspoon pepper
  • 2 cups all-purpose flour
  • 1 teaspoon red pepper flakes
  • 1 egg, slightly beaten
  • 12 cup milk
  • vegetable oil

    Season chicken with salt and pepper.

    Combine four and red pepper; set aside.

    Combine egg and milk; dip chicken in egg mixture; and dredge in the flour mixture, covering well.

    Heat 1 inch of vegetable oil in a skillet ( 350F) place chicken in skillet, ( not too many at once, or it will take a long time to cook).

    Cover and cook chicken over medium heat 20-25 minutes or until golden brown, turn occasionally.

    Drain on paper towels.
