- 4 tablespoons pearl barley
- 1 1/2 pounds apples peeled, cored and sliced
- 3 tablespoons sugar
- 1 cup heavy cream
- 1 tablespoon lemon juice
Directions

1Boil barley in water and add the apples. Cook until both begin to soften.

2Drain and blend the mixture in a blender.

3Transfer to a saucepan, add the sugar and lemon juice and bring to a boil. Reduce heat and simmer until sugar has dissolved.

4Remove from heat and allow to cool then chill in refrigerator.

5Serve with whipped cream on top
