Apple Barley Pudding

  • 4 tablespoons pearl barley
  • 1 1/2 pounds apples peeled, cored and sliced
  • 3 tablespoons sugar
  • 1 cup heavy cream
  • 1 tablespoon lemon juice

Directions

    Boil barley in water and add the apples. Cook until both begin to soften.

    Drain and blend the mixture in a blender.

    Transfer to a saucepan, add the sugar and lemon juice and bring to a boil. Reduce heat and simmer until sugar has dissolved.

    Remove from heat and allow to cool then chill in refrigerator.

    Serve with whipped cream on top
