Ingredients

  • 4 apples, peeled and chopped
  • 2 c. sugar
  • 1 box chopped dates
  • 1 c. oil
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • 3 c. flour
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 1 tsp. each cinnamon, allspice and nutmeg
  • 1 c. pecans

Directions

    Mix together the first 4 ingredients and let stand for 1 hour or until sugar is dissolved. Add the eggs, then the vanilla. Mix together the flour, salt, soda, cinnamon, allspice and nutmeg. Add the pecans. Combine the two mixtures.

    Mix to moisten. Bake in well-greased and floured Bundt pan at 325° for 1 1/2 hours or 2 loaf pans for 1 hour.
