Ingredients

  • 2 c. sugar
  • 3/4 c. vegetable oil
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 c. chopped nuts
  • 2 c. sifted flour
  • 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 4 to 5 tart apples (about 4 c.), peeled, cored and diced
  • powdered sugar (optional)

Directions

    Combine sugar, oil, eggs and vanilla in large bowl; use electric mixer and blend well.

    Sift together the dry ingredients; add to sugar mixture.

    Blend thoroughly.

    Stir in diced apples. Pour into greased and floured 12-cup Bundt pan.

    Bake at 350° for 1 hour, or until taster comes out clean.

    Let cake cool 10 minutes in pan on wire rack, then turn out onto rack.

    When cool, sprinkle with powdered sugar.
