  • 1 3/4 c. sugar
  • 3 eggs
  • 7/8 c. oil (3/4 c. plus 1 tsp.)
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 c. finely chopped apples (about 2 apples)

Directions

    Beat the sugar, eggs and oil until creamy.

    Sift together the flour, baking soda, cinnamon and salt; add to creamed mixture. Fold in the chopped apples.

    Bake in a well-greased 9 x 13 1/2-inch pan at 350° for about 40 minutes.

    When almost cool, cut into squares and sprinkle with powdered sugar.
