Apple Cheddar Quesadillas

  • 1/4 cup firmly packed brown sugar
  • 1 tablespoon Land O Lakes Butter
  • 1 large (2 cups) tart apple, sliced 1/8 inch
  • 1/4 cup sweetened dried cranberries
  • 4 (7-inch) low fat whole wheat tortillas, warmed
  • 4 (3/4-ounce) slices Land O Lakes Deli Sharp Cheddar American Blend,
  • cut in half diagonally

Directions

    Combine brown sugar and butter in 10-inch skillet.

    Cook over medium heat, stirring occasionally, 2-3 minutes or until bubbly.

    Add apple slices; continue cooking 5-8 minutes or until slices are tender.

    Stir in dried cranberries.

    Remove from heat.

    Heat 10-inch skillet or electric griddle over medium heat.

    Spray 1 side each tortilla with no-stick cooking spray.

    Layer each, sprayed-side down, with 1/4 apple mixture and 2 cheese halves.

    Fold tortillas in half over mixture.

    Place 2 quesadillas into skillet.

    Cook, turning once, 3-5 minutes or until golden brown.

    (If necessary, wipe out skillet with paper towels.)
