Apple Cream Cake

- 1 Apple (preferably Jonathans or other tart baking apples)
- 100 grams Unsalted butter
- 2 tbsp + 80 grams Granulated sugar
- 2 Eggs
- 100 ml Heavy cream
- 150 grams Cake flour
- 1 tsp Baking powder
Directions

1Peel the apple, then quarter and slice to 2-3 mm thicknesses.

2Sprinkle in 2 tablespoons of granulated sugar.

3Cover with plastic wrap and microwave for 3 minutes (at around 500 W), and let cool.

4Sift the flour and baking powder.

5Bring the butter to room temperature and whisk in a bowl until creamy.

6Add the granulated sugar and mix.

7Add the beaten egg, little by little.

8Whisk in the heavy cream.

9Add the apple with its juice from Step 1.

10Add the dry ingredients from Step 2 to the bowl.

11Mix with a spatula.

12Pour the batter into a cake tin.

13Bake on the bottom rack for 35 minutes in an oven preheated to 355F/180C.

14Sprinkle with powdered sugar once cool.
