  • 6 cooking apples
  • 1/4 cup cold butter plus 2 tablespoons butter
  • 2 strips lemon peel
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup sugar
  • 3/4 cup all-purpose flour
  • Salt

    Preheat oven to 375 degrees

    Peel the apples, cut them into quarters and core them.

    Butter an eight-inch baking dish with the two tablespoons of butter.

    Arrange the apple slices in the dish.

    Add the lemon peel and sprinkle on the cinnamon.

    Cut the remaining butter into pieces.

    Combine the sugar, butter and flour, either in a mixing bowl or in a food processor, using a steel blade.

    If using your fingers, blend the mixture until it has the texture of coarse breadcrumbs.
