  • 4 c. biscuit mix
  • 1/2 c. sugar
  • 2 c. canned apple slices, chopped
  • 1/4 c. milk
  • 2 tsp. vanilla extract
  • 3 eggs
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 c. apple juice
  • 1 1/2 tsp. lemon juice
  • 4 c. confectioners sugar
  • 1/2 c. coconut, toasted or tinted

    Combine biscuit mix and sugar; add chopped apples, milk, vanilla, eggs and spices.

    Stir until well blended.

    Knead dough on a heavily floured board until smooth.

    Roll out dough about 1/2-inch thick.

    Cut out doughnuts with a floured 3-inch doughnut cutter.

    Drop doughnuts, a few at a time, into 400° oil about 2 inches deep in pan.

    Cook about 1 minute on each side or until evenly browned.

    Drain on paper towels.

    Bring apple juice and lemon to a boil.

    Stir in confectioners sugar and beat until smooth.

    Spoon about 2 tablespoons glaze over each doughnut while warm.
