- 3/4 c. unsweetened applesauce
- 3/4 c. brown sugar
- 1 tsp. vanilla extract
- 1 3/4 c. whole wheat pastry flour
- 1 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 3/4 c. unsweetened apple juice
- 2 c. diced, unpeeled apples
- 1 c. chopped pecans or walnuts
- 1/2 c. raisins
- whipped topping, frozen vanilla yogurt or ice cream (optional)
Directions

1Preheat oven to 350°.

2Grease a 9-inch square or round cake pan.

3In medium bowl, blend together applesauce, brown sugar and vanilla by hand or with a mixer.

4Add flour, cinnamon and salt. Stir a few times to combine.
