- 1 c. oats, uncooked
- 1 c. flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/3 c. honey
- 1/4 c. skim milk
- 1/4 c. salad oil
- 1 egg
- 2 medium-sized cooking apples, peeled and diced
Directions

1In large bowl, mix first 5 ingredients.

2In small bowl, beat honey, milk, oil and egg until blended; stir in flour until moistened.

3(Batter will be lumpy.)

4Fold in apples.

5Spoon batter into muffin tins, coming almost to top of each cup.

6Bake 18 to 20 minutes or until toothpick inserted in center of muffin comes out clean.

7Bake at 350°.

8Remove from pan.

9Serve warm or cool.
