- 2 eggs
- 2 c. sugar
- 1/2 tsp. salt
- 1 1/2 c. vegetable oil
- 2 tsp. vanilla
- 2 Tbsp. lemon juice
- 1 Tbsp. grated lemon rind
- 3 c. flour
- 1 1/4 tsp. soda
- 1 tsp. apple pie spice
- 3 c. cooking apples
- 2 1/2 c. chopped pecans
Directions

1Preheat oven to 325°.

2In a large bowl, beat eggs until frothy. Add sugar, salt, oil, vanilla, lemon juice and rind.

3Beat until well blended.

4Sift flour, soda and spice together.

5Add gradually to egg mixture until well blended.

6Stir in apples and pecans. Grease and flour angel food cake pan.

7Bake 1 1/2 hours at 325°.
