- 4 to 5 cooking apples (depending on size)
- 3/4 c. plus 1 tsp. granulated sugar (if you like tart pie)
- ground nutmeg (optional)
- ground cinnamon (optional)
- milk
- unbaked pie shell
Directions

1Preheat oven to 400°.

2Peel, core and slice apples.

3Mix with 3/4 cup sugar and place in unbaked pie shell.

4If desired, sprinkle with nutmeg and cinnamon.

5Cover with top crust and crimp edges firmly.

6Make several slits in top to allow steam to escape. Brush top with milk.

7Sprinkle with 1 teaspoon sugar.

8Bake 10 minutes, then reduce oven temperature to 350° and cook 50 minutes more.

9Serve hot with Vermont cheese.

10Yields one 9-inch pie.
