- 2/3 c. packed brown sugar
- 3 Tbsp. flour
- 3/4 tsp. cinnamon
- 9 c. apples, peeled and cut into 1/2-inch thick slices
- 1 Tbsp. lemon juice
- 1 egg, slightly beaten
- 1 Tbsp. sugar
- 1/8 tsp. nutmeg
Directions

1Place oven rack in lowest position.

2Heat to 425°.

3Mix brown sugar, flour and spices in a large bowl.

4Add apples and lemon juice.

5Toss gently to mix and coat.

6Spread on pie crust in pie plate, mounding apples in center.

7Put remaining crust over pie and seal edges.

8Brush pie with egg.

9Sprinkle with sugar.

10Slit top of crust for steam to escape.

11Bake 20 minutes.

12Reduce oven to 375° and bake 20 to 25 minutes longer, until crust is golden brown and fruit is tender.

13If topping browns too quickly, drape a piece of foil loosely over pie.

14Serve warm.
