- 4 1/2 c. sugar
- 1 c. cornstarch
- 2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 3 Tbsp. lemon juice
- 6 lb. apples
- 4 tsp. salt
Directions

1Blend first 4 ingredients with salt.

2Stir in 10 cups water; cook until thick.

3Add lemon juice.

4Pack apples into hot jars. Add filling alternately with apples.

5Leave 1/2-inch head space. Process in a boiling water bath: 15 minutes for pints, 20 minutes for quarts.

6Makes 6 quarts.
