- 4 1/2 c. sugar
- 1 c. cornstarch
- 2 tsp. cinnamon
- 1/4 to 1/2 tsp. nutmeg
- 1 1/2 tsp. salt
- 3 tsp. lemon juice (optional)
- 1/4 tsp. yellow food coloring
- 6 to 8 lb. apples, peeled, cored and sliced
- 10 c. water
Directions

1In large pan, blend in first 5 ingredients.

2Stir in water; cook and stir until thickened and bubbly.

3Add lemon juice and food coloring.

4Pour in a little juice (syrup) in quart jar 1/2-inch.

5Pack apples into jars and fill with syrup, leaving 1-inch headspace.

6Put lids on and process in boiling water bath for 15 minutes for quart jars.

7Yields 7 to 8 quarts.
