Ingredients

  • 4 1/2 c. sugar
  • 1 c. cornstarch
  • 2 tsp. cinnamon
  • 1/4 to 1/2 tsp. nutmeg
  • 1 1/2 tsp. salt
  • 3 tsp. lemon juice (optional)
  • 1/4 tsp. yellow food coloring
  • 6 to 8 lb. apples, peeled, cored and sliced
  • 10 c. water

    In large pan, blend in first 5 ingredients.

    Stir in water; cook and stir until thickened and bubbly.

    Add lemon juice and food coloring.

    Pour in a little juice (syrup) in quart jar 1/2-inch.

    Pack apples into jars and fill with syrup, leaving 1-inch headspace.

    Put lids on and process in boiling water bath for 15 minutes for quart jars.

    Yields 7 to 8 quarts.
